Rainbow Ice Cream Cone Cupcakes
This recipie was featured in our May newsletter and I have had so much great feedback I decided that I should share it with those of you that haven't yet signed up! (Generous of me isn't it??!)
It is a super easy effect - sure to be a hit at your next event!
Using a basic vanilla cupcake recipe (packet or from scratch - I'm not one to judge!), divide the batter evenly into separate bowls for each colour (up to 6 colours).
Use gel colours to add deep colour to each bowl making sure to mix the batter well.
HINT: You can grab gel food colouring in the cake decorating section of your local supermarket - I prefer gel to the liquid ones as they can tend to make the batter too runny.
Transfer the coloured batter into piping bags (TIP: If you don't have piping bags, cut the tip of the bottom of a zip-lock bag and fill with batter)
Line up your ice-cream cones onto a tray and gently fill each cone with a thin layer of each coloured batter (be careful not to disturb each layer of colour).
Bake for 18-20 mins and remove from oven to cool.
While they are cooling down, make a basic royal icing recipe
Once cupcakes are cooled, dip the cupcakes into the icing and sprinkle with 100's and 1000's and top with red smarties before the icing dries (TIP: Royal icing dries very quickly so you will need to work fast!)
