Iced Ginger Cookies

Oh yes its Christmas again!!

This is one of my favourite things to bake for my family at Christmas time - its (another) Magnolia Bakery Recipe... Simple and super yummy!



  • 2 cups flour

  • 2 teaspoons baking soda

  • 1 teaspoon ginger

  • 1 teaspoon cinnamon

  • 1/2 teaspoon salt

  • 3/4 cup canola oil

  • 1 cup sugar (plus 2 tablespoons for sprinkling)

  • 1 large egg at room temperature

  • 1/4 cup light molasses


  • 1/2 cup icing sugar, sifted

  • 1 tablespoon solid veg. shortening

  • 2 teaspoons water


  1. Preheat oven to 170 degrees.

  2. In small bowl combine flour, baking soda, ginger, cinnamon, and salt. Set aside.

  3. In large bowl on medium speed of electric mixer, beat oil and sugar together for 3 minutes.

  4. Add egg and molasses and beat well.

  5. Add other dry ingredients and mix thoroughly.

  6. Drop by rounded teaspoons onto ungreased cookie sheet.

  7. Sprinkle lightly with sugar.

  8. Bake for 12 minutes (I only do 7, but all ovens are different, but keep in mind that they burn so easily because they are thin)

  9. Let cool on cookie sheet for 5 minutes, then move to wire rack to cool completely.

  10. To make icing, combine all three ingredients and beat well with electric mixer. Spread on cookies while still warm. Let icing set before stacking cookies or they will stick together.
